You're still using POP for email? I switched to IMAP years ago and never looked back - the automatic synchronization makes keeping my account at home and my iPhone account seamless - whatever you do on any device automatically syncs to all other devices, including the iPhone.

And yes, folders do sync.

The voice dialing is something I never got accustomed to having as the iPhone was my first phone that even had Bluetooth, so I can't say I ever missed it, but I can understand how others do. It always seemed like a glaring oversight on the original iPhone and 3G and I see no reason why they couldn't support it (at least the 3G) without much effort, but Apple seems to want to hold it back (my guess) and keep it a feature solo to the 3GS. I wouldn't be surprised to see it appear with a software update on the 3G once the 3GS initial sellout is over.
